Peanut Butter Banana Muffins

I have 6 peanut butter at home and I need to used them so I made peanut butter banana muffins. This recipe is easy, and also use no butter and no eggs.

















I also used Nordic Ware mini bundt cupcake pan.

Peanut Butter Banana Muffins

2 ripe bananas1/3 cup honey1/3 cup peanut butter 2/3 cup fat-free plain yogurt1 tsp vanilla1 tsp baking soda1 tsp baking powder1/4 tsp salt1/2 tsp cinnamon1/8 cup sugar1 3/4 cup all-purpose flourcinnamon sugar for topping (optional)

1.Preheat the oven to 375 degrees.  Line muffin tinswith baking cups and lightly spray with canola oil.2.Mix the wet ingredients together–mashed banana, honey,peanut butter, yogurt, and vanilla.  In a separate bowl, combine the dryingredients (flours, salt, baking powder, baking soda, sugar, and cinnamon).3.Add the wet and dry together and stir until justcombined–overmixing leads to tough muffins.4.Spoon the batter into the muffin tin until the cups are3/4 full, sprinkle with cinnamon sugar, and bake on the middle rack in the ovenfor 15 minutes.
